Mon Restau Responsable<sup>\u00ae<\/sup> propose une approche qui vise \u00e0 impulser une d\u00e9marche de progr\u00e8s sur la dur\u00e9e. Tout commence par une analyse de la situation actuelle du restaurant, gr\u00e2ce \u00e0 la r\u00e9alisation d\u2019un questionnaire d\u2019auto-\u00e9valuation. Ensuite, l\u2019\u00e9quipe du restaurant d\u00e9finit les engagements qu\u2019elle souhaite prendre pour progresser, puis elle les pr\u00e9sente lors d\u2019une s\u00e9ance publique. Tous les deux ans, lors d\u2019une nouvelle s\u00e9ance publique, le restaurant expose les actions mises en \u0153uvre et fait valider le respect des engagements pris.<\/p>\n<p>Le CHU de Poitiers a d\u00e9j\u00e0 mis en oeuvre de nombreuses actions \u00e9co-responsables : lutte contre le gaspillage alimentaire, dons alimentaires, plats v\u00e9g\u00e9tariens, fait-maison, introduction de produits bio et labellis\u00e9s, etc. Pour consolider son engagement dans la d\u00e9marche Mon Restau Responsable<sup>\u00ae<\/sup>,\u00a0 l\u2019\u00e9quipe de la restauration a d\u00e9fini de nouvelles pistes d\u2019am\u00e9lioration. Parmi ces pistes qui seront les engagements \u00e0 tenir, une alternative au plastique, la diversification des prot\u00e9ines, ou encore la valorisation des bio d\u00e9chets. Comme l\u2019a soulign\u00e9 Guillaume Deshors, directeur g\u00e9n\u00e9ral adjoint du CHU de Poitiers, cet \u00e9v\u00e8nement est l\u2019occasion de mettre en lumi\u00e8re l\u2019\u00e9quipe de la restauration qui, \u00e0 l\u2019instar des autres services de logistique, a un r\u00f4le important dans la prise en charge des patients.
